Since the Middle Ages, monks have combined the virtues of plants and brandy to preserve the sap of medicinal roots. Even today, Armagnac brandy continues to delight. Domaine de Rébert, located in the heart of Bas Armagnac Noir, produces only a few thousand bottles a year. The grapes of the Baco, Ugni Blanc and Folle Blanche grape varieties are harvested in October, fully ripened, pressed and vinified. From November onwards, shortly after fermentation, the wine is distilled without any stabilizers in copper stills that have belonged to the family since the 19th century. The 56% of the resulting vat is stored in new oak barrels for at least 12 months. It is from this moment that Armagnac takes on the golden color of precious woods and gives off aromas of toasted, aniseed, spicy and dried fruits, what we call the "rancio" of Armagnac. In this way it is aged for several years in an atmosphere with 70% humidity.
