Many whisky connoisseurs will probably be wary of the name 'Ailsa Bay'. This is probably because the Scottish Lowland single malt has only been available on the market since 2016, and so far there have only been a few original bottlings. However, with eight stills, the company has been producing whisky since 2007, and in four different whisky styles: 'nutty', 'fruity', 'smoky' and 'esterised'. It's easy to see that most of the whisky produced at Ailsa Bay (owned by Grant & Sons) is destined for blending.

Brians Kinsman characterises Ailsa Bay whisky by two variables in the final distillate: 'phenol parts per million' (PPPM) and 'sweetness parts per million' (SPPM). With 22 PPPM and 19 SPPM, Sweet Smoke Single Malt shows a good balance between smokiness and sweetness. It was matured in small casks at the Tuthilltown distillery in New York. The only Scotch whisky to undergo this process, it is first matured in small bourbon casks for six to nine months. These relatively small casks allow for rapid and intense maturation. The liquid is then transferred to American oak casks for several years.

Tasting Notes
Nose : Notes of smoky wood with a slight hint of heather. Gradually the sweetness of the oak replaces the smoky notes. This sweetness is enhanced by its notes of caramelized apples.
Palate : The initial peaty liveliness is quickly balanced by an explosion of vanilla. The palate oscillates between smoky, fruit and caramel notes.
Finish : Balanced with a perfect synergy between the sweetness of oak notes and dry peat notes.
